About KOU

In September 2025, we opened a small nine-seat counter in Sakae. The name KOU is the one name my mother left to me. We hope to be a place where authentic sushi can be enjoyed with ease.

Care in every piece.

Straight out of middle school, I travelled to Otaru, Hokkaido and entered the world of sushi. Sixteen years of choosing fish, holding a knife, and learning with my hands. I put all of it into each piece for the guest in front of me.

Chef's Message
